Prepared entirely without canned processes, the stock is simmered using Hokkigai, pure water, and mirin, avoiding the metallic off-flavors typical of canned products. It delivers a clear, naturally sweet flavor, making it the preferred base for traditional Chinese banquet dishes such as Hokkigai and Pork Tripe Soup and Hokkigai Hot Pot.
